Cold start troubles

Hey guys, as of right now in winnipeg it's freezing. I have command start and plug the vehicle in. Since last winter I have done a few upgrades and it seems it has disrupted something.

What's happening on colder mornings the car starts rough and has a fluctuation idle. With my afr gauge the sensor reads 10 (really rich)or nothing at all. Also the car won't go over 4000rpm even though the engine temp gauge reads normal temps. If I warm the car up long enough 15-30 mins the car is fine no problem. If I decide to drive while I still can't go over 4000 rpm at one point if I drive long enough the car will all of a sudden "kick" and go back to normal driving. Before the kick the car is running really rich watching my gauge go down as I drive.

A few things to consider:
-New short ram intake surrounding the maf sensor

- cold start mornings car throws a p0102 code low voltage to maf sensor.

- few weeks ago engine coolant was empty when I checked refuelled checked a few days later coolant level was fine

Doing research before posting this has me thinking, maf sensor to cold? Engine temperature sensor needs to be replaced?
