I had my headgasket replaced not to long ago. The funny thing is that the coolant overflow tank still empty its self out. Its not fast like a headgasket would to but its slow and takes a week. I dont see any on the floor in the garage

Are you sure the system is full? It will also suck what it needs from the overflow bottle. Fill the bottle back up to the cold fill line and monitor it.

Probably burning coolant or like one guy said you didnt have the radiator all the way full so it pulled it out of the reserve. If your burning coolant you might also have some oil in your reserve tank. so Check for that

how much coolant has it sucked to date? And what's the rate, a cup/week, etc.?

No I dont notice any white smoke. If I drive it all day then it is 3/4 gone. No leaks, I have to fill it twice a week

its simple, either you have a leak thats hitting a hot spot and evaporating, leaking and you dont see it, or your burning it.. those are your 3 options..

if its the headgasket or warped head that would prolly be whats causing it to burn coolant. white smoke is a real good sign of a blown headgasket. since your not really seeing that. It might mean your just very slightly burning coolant or its leaking somewhere. or leaking onto a hotspot then evaporating/burning

did you take off the oil cap and see if its a brown milky color, dont check just the dip stick, take off the cap and look inside. You could have just a small leak, they have sealant stuff for that. It might help, but since you just had the gasket done it should be under warranty.
do a pressure test of your coolant system.
