How do I open/read it (to see my fuel trims and O2 sensor readings)?

Data logs created by DashCommand can be viewed in ScanXL.

You can also use ScanXL to write scripts which can be imported to DashCommand. (I.e Scripts to calculate fuel consumption, boost pressure, power, torque, etc. based on data from the OBD-II values.)
