Data Acquisition Discussion (I want to log everything...)

So I've got this handy little thing called the LMA-3, which has several 0-5V inputs that can be used to log whatever sensor(s) I want to throw at it, and it got me to thinking how I could log all kinds of info and what kind of sensors would be needed to log the info.

I already know that we can log all kinds of info from our stock ECUs, so that's a given, but what about more esoteric information, like:

- Brake rotor temperature
- Brake caliper temperature
- Brake duct air velocity
- Air pressure in various locations (e.g. behind the IC, under the car, etc.)

I know professional race teams monitor all kinds of statistics on their cars. Does anyone have a source for various 5V sensors that can be used for applications like these?
