Yep you can use it by itself. It is designed to work exactly as you describe (weld a bung and run wire to the controller).

I also have two cars I want to tune with it, does that mean I buy two sensors, or can I somehow calibrate it to read after the the cat? (Obviously it's leaner after the cat, but we could always compensate)

I think you will want to put a bung before the cat, on both cars then swap the setup, the sensors don't like not being powered.
so you remove the sensor if you are not useing it.
