Brakes dont 'bite' as well after new rotors, pads, SS lines, fluids

Bedding doesn't get rid of pedal mushiness. You likely just need to bleed them again.

In the end, if still not satisfied with bite, you are going to have to swap front pads. What works on one application can be a dud on another.

And, I'd say the Evo brake is a low bite system. Put on a standard Advance Auto pad and the stopping distance is forever. Low bite provides lots of modulation. Bite of your choice is then provided by the pad chosen.

I guess I am just used to my BMW having a ton of bite, I tap those brakes and my head hits the wheel (not literally) but it basically feels like this

I bought my car used with 60k, owner said pads were worn, so I finally got them replaced, and I cant tell whether better or not lol

But it's good to know they arent supposed to have a lot of bite, they do feel better after the bedding process though

Will get them bled again whenever I get a chance,m they stop 'good' now

As mentioned above, pad material/composition will have a lot to do with that feeling as well. In general, street pads will usually have a softer bite. When you get into higher temp (track/autocross) pads, there are options for different types of pads depending on what type of brake feel you prefer. Many prefer a softer bite with high brake power to avoid instant lockup and give good modulation/feel.

Rebled brakes, the inside bleeders had some air in them

Brake pedal feels a lot better
