What size wheel spacers can I run on stock EVO X GSR wheels

Not really. At least, not as much. Most people have some of extra tire to the inside when they "up-size." What you all are talking about is moving everything outwards.

I have no reason to believe that widening the track will cause problems for the AYC. But it would have an effect and I was wondering if anyone detected such.

Can you run different sized spacers front ant rear.. i.e. 25mm rear and 20mm front? without any adverse effects?

Yes you can, you just can't run tires with different widths.
