does anyone else sometimes have a problem with cold starts trying to shift? once in a while its hard to actually get the car into gear, just wondering what that is and if its normal

I would think its because the fluid is so cold, and the clutch/trans being so cold itself that it may just get a little sticky until its all up to operating temps. I had a twin disc and a built trans in my 2G that I DD'd, and up here in NY when it was winter/single digit temps out, I would literally let my car idle for 15mn just to be sure everything was nice and toasty.

I definitely noticed a huge difference in shift/clutch quality when she was warmed up before I drove.

Normal. Double clutching helps a bit sometimes.
