205/60/16 to 205/55/16

I am considering going from the stock 16 inch size to 205/55/16 since the 60 tires are find have quite a lot of vice and make the car feel like at rolls side to side too much. Will that be ok?

it's going to lower your ride height by 0.4 inches but the width should be the same so it you are on an ES it should be fine.

Check with your tire shop. you should be fine since the rim is the same and the tyre width is not changing. Although your speedo will be a few MPH off since your will have a smaller diameter tire, hence more Revolutions=offset speedo readout.
