The difference is the price. One's reversible, the other isn't. You won't hurt the resale value of your car with vinyl, since you can remove it at anytime. The vinyl might even protect the paint from sunlight, etc.

So how hard is this to install over curves? (the X roof isn't really flat on the edges). I assume you heat it up and stretch it?
Will it cover stone marks? Or will it pucker in? I've got a couple on the hood that are slightly smaller than eraser heads.
And price?
I'm just afraid I'd put a crease in it and then be screwed!

It will pucker to it. If you want to fill stone marks, you want bondo
I've honestly been able to cover almost any curve/bend without too much trouble.
I was able to do the graphics on the side (over the fender flares and back onto the rear quarter panels of the car) of my car, without using any heat:
