I just did all my 60k service stuff (fluid changes, belts etc...) and i'm at 59k. One thing I have left to do is a Valve Lash adjustment. My question is, will this cause any catastrophic damage if I don't do an adjustment right away, or can I go awhile before doing one?
you should be fine, are your valves noisy?
if you can't hear them getting hammered then it's fine, it won't cause any catastrophic failure, it's just adjusting the gap between the rocker and the end of the valve stem..when it's adjusted properly you're car will run better and smoother.

Yah, after doing my timing belt and everything, its pretty loud when its running. I know I should get it done, but I just don't seem to have the time lately, and don't have the money to get it done right now.
it should no take long at all maybe 15 minutes cold, and the same for hot...do you know the procedure? If you study the procedure thoroughly you should be able to do it quickly without buggering anything.
I've read through the procedure, I just don't feel comfortable with bolts and internals lol. I did my struts and springs, and udp and tb and such, but just nervous about stuff inside the engine.
taking the valve cover off, is not really "internals" it uses a rubber seal, not a gasket, so you can take it off and on without replacing it. And it's really quite simple once you see it. As long as you leave some kind of gap between the rocker and the top of the valve stem, which is the procedure in question.
too much gap=noisy
no gap or positive pressure on the valve=compression issues
as long as you know and follow the procedure you're golden.
it's up to you man, if you're really not confident maybe you can find a mechanic that will let you watch, that's the next best way to learn.

Its been awhile since I read the procedure. I recently took off my valve cover to paint it. Now that I re read the procedure and seeing the internals, the explanations and terms make more sense to me. I may just end up trying this sometime soon if I can pick up some feeler gauges.
