1st time logging with evoscan?
RPM, TPS, Timing, knock, and if you havent quite got to the level of modifying the xml by adding 2 byte load use calculated load in the mean time. It will require you to log some other variables that I dont recall but it has a bunch of little prompts and just click yes.
Something I log just for comparison sake but really doesnt affect the tune since you end up tuning for it anyway is the Baro and Air temp. Lets you know what your underhood temps are versus ambient temp and gives you a rough idea of how restrictive whatever air filter system you use is at a given amount of boost (or vacuum if you stop to think about it) and altitude.

So I logged with my rough self tune and the upgraded mivec and boost maps. I got knock sums ranging from 2 to 7 mainly in the 6500rpm range. think I need to add fuel around the 6500 range
save yourself a lot of ghost chasing and throw in brand new spark plugs before REALLY starting to tune. Bad/worn plugs can cause random knock events and have you adjusting things all over the place for no real reason. Good luck with it and keep us posted.

I have a list of the common variables that need to be logged for tuning purposes on my website (see sig). I get asked this question a million times so I finally wrote it down for people so they can reference it easily
