open loop tuning??

Hey guys, to start off im in a 3g eclipse running an evo ecu with a forge wastegate, 9.8 evo8 turbo. Daily driven, Self tuned so far over the last year or so. So heres 2 questions...
I had few minutes to tune with the car but had to hit the freeway soon after. On the way out to the freeway i ran 1st-4th to see the results of my recent adjustments. Ive been working with a map tracer in excel to analyze the knock, timing, fuel, load, rpm variables, and put out suggested adjustments according to formulas ive been using just not in an automated way. Anyway heres the mystery. My car seems to like to run in the 12s when i do 3rd gear pulls. If i add/pull fuel on the map to try an log in the 11s it knocks, loses power or both. So ive left the maps as is and manage with maybe blips of 1-3 counts. BUT! When running through the gears. The AFRs drop a point each gear. So 1st,2nd- 12s. 3rd-11s. 4th-10s. What gives??
Is that a fuel trim thing (modded wrx 440s into 740s)because mine are still swinging in and out of +-5% tolerance. Notice the -6 timing along with excessive fuel and knock. But 1st-3rd are good/clean.

Second question is as embarasing as it is frustrating. Although we all seem to be most focused on dyno/butt dyno pulls an 1/4miles. My car sucks *** on the freeway. Not when i floor it but those low throttle situations...

Notice how my afr is basically stuck in a very narrow 14.3-7 range regardless of load/rpm/throttle conditions. W.T..F...?? I have a suspicion im stuck in closed loop or something to that effect. Reviewing the logs im hitting cells on the freeway that knock, but on the street are clean. Once at my destination i made the following changes to my open loops 1&2s along with the hi/lo throttles.
Can anyone gimme some insight on what EXACTLY the ecu does with these values when youre driving??
