About timing?
Absolutely you can run too much timing. The mtbt method states keep advancing timing(slowly) until the car starts to knock, then back it down a degree or two. This does not apply if you are running e85.
I agree you can run to much timing. When the car knocks it's trying to tell you that it can't run that much timing. So the MTBT method is the prefered method unless you can get on a dyno, then you can fine tune through out your power band for best fuel and timing.

i thought u could run 1-3 counts of knock
1-3 counts is safe, some people will state that 3 counts of knock will pull 1 degree of timing. I'm no expert, but I've used this method and had good results. I've also had my car pull timing at 1 count of knock. It's a push and pull with timing and fuel.
you need a dyno to find mtbt (or a really good logging place, I suppose). If you are on knock limited fuel (93 or 91), Im pretty sure you arent going to hit mtbt. In that case, you add timing till it knocks, and back off. If you had a dyno and good fuel (race gas, e85, methanol, etc), you add timing until torque stops climbing and stop, that is mtbt.
