Kevlar vs Carbon?

What's the diff between kevlar and carbon clutches?

Let me rephrase that, I know what the advantage of a carbon clutch is, but how does kevlar compare to it?

carbon fiber is a generic term. You may be able to glean some of the differences from this website:

when you consider grip and the ability to handle heat kevlar provides an excellent option over any organic, or factory disc material. When compared against a carbon disc material, whose properties provide greater gripping power with heat, the kevlar falls short.

This is not to say that any organic or kevlar disc is not good for street or high power applicatoins....it just boils down to the ability of a certain compound to handle heat (launching), and wether or not you plan to do this over and over in a given timeframe.
