Does it always route oil through the cooler... or does it only route through at a certain temp>????

Theres a thermostat somewhere in the oil filter housing I believe, well its somewhere around there.

Yogi's right. The oil cooler is thermostatically controlled. The thermostat is located in the oil filter housing.
