idle or racing, shouldnt change the temp much. I have defi's and in Celcius its 85-90 range all the time. Fine a calculator and see difference in F.

200 is perfect. Thats the ideal temperature for an engine to run at. Its not too hot, but its hot enough to aid in combustion.

In the US the thermostat opens at 176 F and should say around there. The Ralliart one is even lower.

my experience in logging data with a couple of different turbo cars with stock ECU's is that above 196* the ECU begins to pull timing. I try and keep my temps under that *magic* number.

with our cars around 190 is fine. 200 degrees being ideal is just a general rule of thumb with coolant temps. I've read this in a couple different books on engine building. Naturally, with a turbo things tend to run cooler to protect the engine.

230F is when your head can start to warp. So anything above 225 is what I would consider "danger zone".

Our fans turn on at 190* at idle.
Shuts off when it hits 185*.

Is there a way to wire the radiator fan to be on all the time? Has anyone ever done this? I used to have it on permanently on my Buick Turbo Regal. The Buicks had real overheating problems.
