2-step question
Here is a picture of the settings in AEM. Notice Alt_OK_below_VSS that is used to limit your anti lag settings to a speed (i.e. below 10mph). I am pretty sure it can be used for launching.
Where with using it for between shifts you would probably use the throttle posistion and rpm value instead.

Chris from AMS (as well as other tuners) say its not the greatest for your engine to stand on the two step. But we all still do it anyway.
Well sitting on your 2 step/rev limiter for extended periods of time, will obviously not be good for your engine, (who does this?), but if you wait for the first amber and then get on your 2 step you are only on it for like a second max. If you sit on your limiter for extended periods of time, you deserve what you get

From what I've been told, you're car will have a good bit of knock while bouncing off the 2 step. I think the duration of time on the 2 step will exacerbate the problem. For short periods of time, as in after the first amber at the drag strip, I'm sure you will be fine.
