I just finished a clutch job, everything shifts fine and stuff, but my water temps slowly climb to critical levels

It goes from 140 and then escalates all the way to about 215+ in about 3 minutes

What are you using to measure coolant temp?

The thermostat should keep the temp between 185 and 197F when warm. I use OBDII data for coolant temp logging, I have never seen over 197F but it reaches that temp many times on a drive.

Nevertheless, need to know how your measuring the temp first to see if that actually IS 215F.
If so, might be low coolant or air trapped in the system. It's quite a processes to properly refill the coolant system without inducing air BTW

4 possibilities:

1. Engine full of air
2. Stuck thermostat
3. Fan not working
4. Blown head gasket
