Just wondering, how do normal mechanics tune a stock evo for "stock" driving?

I've been reading how various tools interface with performance ecus, but nothing about stock ecus.

Do they have some sort of software that interface with the stock ecu?

Just wondering since I came from a carburator car before getting my evo, and mechs just tweak the dials on the carb.
