mixing and matching clutch and pressure plate's???

mixing and matching clutch and pressure plate's???

Hi, I need to replace my clutch and or pressure plate (on a evo 6). I have found a 2nd hand Exedy stage 2 pressure plate and 4 puk clutch (for $3... thats right only $3) the clutch will need replacing So my question is: can I mix and match exedy pressure plates and clutches??? could I use say a organic stage 1 clutch disk with a stage 2 p-plate?? and is it possible to change the pads on a puk clutch disk?? Thanks for and help!!

P.S when replacing a clutch, whats easier:
A: Removing the engine and gear box as one? (ive done this in the past)
Or
B: trying to remove just the gearbox?
