My personal opinion on this:
IF YOU DO NOT TRACK (track = road course)
Oil temp: I doubt you'd ever stress the engine oil to reach 130C under street conditions (if you do, you better don't, dangerous driving
) Still, it's useful to know when your car is fully warmed up. Good to have.
Oil pressure: good insurance against oil leak. If your pressure drops you'll know instantly. Important to have.
Water temp: again, I doubt you'll ever boil the water at 100C for prolonged time. Besides, you already have water temp gauge in the car. Purely optional.
IF YOU TRACK, all 3 gauges are important. Oil temp and oil pressure a must have, water temp less so but still important.
