Suddenly rich. HELP!!
You said the plugs look fine... If you're running as rich as you seem to be, your plugs would show it.
Have you logged some pulls? That'll help give you a better idea of what's going on.
How's your battery voltage? Test your alternator, as well.
If the alternator isn't charging the battery, and you're running the car on just the battery juice, it won't take long before it starts to run terribly. Coils and plugs suck some serious juice!

I didn't think the plugs showed rich the same on E85 as it does on gasoline.
Battery voltage looks good but I have not tested the alternator. Haven't had any dead battery issues.

d'oh, I forgot you're on E85. I guess that only leaves my last suggestion, the alternator.
How many times have you started the car, and how long have you driven it? If the battery is still good today (13.5v or more) then you're issue probably isn't battery/alternator related. Couldn't hurt to test them, though.
EDIT: Just noticed you posted a log on the 1st page. I'll take a look at that.

FIC 1680s. Going to send them in and get the 2150s. Also sending my Sparktech unit in to get bench tested. Did a compression test yesterday and it was 160-160-150-160 so all is good there.
That body style of injector has an issue related to fuel temperature. Once the fuel temp reaches a certain point the injector starts to lean the car out.
What happens is when the car sits for a period of time and the fuel cools it runs super rich until the fuel temp gets back up, then it will be ok until it gets too warm, and then it will start to lean out.
ID put out a press release stating these problems. We ran into this issue awhile back and was told there is no fix.

There were only very sporadic issues with the 1680s. In speaking with FIC, it seems they may have some data soon to show the real issue at hand and that it's not exactly the injector.
