It's probably the wrong type or not calibrated or both.

When the engine is cold, before it's started, the IAT should read the same as the coolant.
When it's hot, as in shut down and left to heat soak for a while, it should also read close to the coolant temp.

Having an IAT sensor reading wrong is another error to the install.

You've also got it mounted in the wrong place, it should be in the manifold as all factory SD installs are.
Having it in the wrong place makes a difference to the part throttle AFR.

If it's a pure race car it doesn't matter but for a road car it DOES matter.

I’ve always seen then mounted on the ic pipe inches from the tb...it used to work just fine like this...if it’s reading wrong now then it’s either bad sensor or the connection...what I want to know is if what is reading is wrong and according to what you just said it’s reading wrong...

They are like 20 bucks just throw one in see if it fixes your issue. Or borrow one from someone else on sd

I don’t even remember what sensor I got...is there any writing on the sensor or does it say it in your tune? Maybe there’s only one kind of sensor that works with it?
