Question Engine oil level

Does anyone else get this when they change their oil? I drain the oil, wait till there is barely any dribbling out. Then I remove the oil filter again I wait until there is no appreciable amount of oil coming out. Re-install the drain plug with new crush washer new oil filter with some oil in it already. Start to fill the engine back up. I put in 3.5 quarts and check it, right around the lower safe mark. So I put in a little more to get it to the upper mark and start the car. I let the car run for a good five minutes or so then turn it off and immediately check the dipstick. It now reads at lower safe mark. I then let the car sit for atleast a half an hour and check it again, still low so I top it off again by now there is 5 quarts in the engine. I drive it a little last night and everything is fine. I go out to the car this morning and check it again after it has sat for a good 10 hours and the thing is like a quart over full. Drive around some today I get home check the oil right after shutting it off and it is still atleast a half of a quart over full. I'm assuming (we all know what they say about assuming) that it just takes a long time for oil to drain back into the pan from the top of the motor and the oil cooler but I'm curious as to why it was still overful after driving it today. Does anyone have any input on why this happens?
