That is nice for a stock block. What dyno where you on?? I'm only guessing, but i dont think its a Mustang dyno due to higher numbers. All and all sweet run nontheless!

The graph states it's a DynoJet.

The graph also shows that you reach full boost at about 5,900rpm ~ 6,000rpm... not 5,000rpm like you state.

None the less, not trying to create an arguement. Those are very nice #'s for the stock block to hold.

Actually, that's a ton of lag. You are only just beginning to build a minute amount of boost at 5k. You don't hit full boost until 5800 (peak torque hits at 6200). That's extremely slow spool, and that's while on alky. On 93oct, it's gotta suck to drive daily. At the drag strip, it should be pretty awesome, though.
