I'm thinking about going 19's but from what I've seen, 19's really make the stock rotors look small. Anyone running larger rotors on stock calipers?
Are you serious? I'm not sure, but I would think that you would run into some issues because the larger outer diameter of a bigger rotor wouldn't fit into the stock calipers near as well. Even the caliper mounting bracket would have to be changed.

I'm pretty sure the only thing that would need to change is the caliper mounting bracket but I'm curious if anyone has done this before.
If you're getting 19's then that tells us two things:
1. performance is not your main priority.
2. you have a little money to burn.
That being the case, just buy the RacingBrake, Stoptech or Rotora big brake kits, they are the cheapest BBKs on the market, and not the best performing, but shouldn't be any worse than stock.
RacingBrake - 14"f / 13"r - $3,750
StopTech - 14"f / 13"r - $4,450
Rotora - 14"f / 13"r - $3,800

Well, I think there is a thread about this before. Someone ran (or currently runs) over-sized rotors on their evo with some brackets.
The only thing you need to change are just the brackets. Can't remember who made the bracket ans rotors but it's someone quite well known like Stoptech or similar.
The main problem here, I think, is that by moving the caliepers outwards from the centre (which you wil have to do) you will increase braking torque on the front compared to the rears for any given brake pedal pressure. Basically it will mess up your brake balance...
