Gears/HP/Torque - Dyno Charts

I am a bit curious about how dyno charts work, and even more to see if it is possible to find out where your max hp/torque is in each gear, to know the best RPM to shift at, etc. At least to know the kind of HP/Torque you have in each gear.

If anyone can shead some light on the issue it would be very insightful!
