I got a set of defi gauges installed, and need some advice on what temperature i should set the warning for my water temperature. So far i have oil temperature at 232, oil pressure at 17, but not sure about water temp.

240 degrees seems really high, even though i know nothing about the car. I have it set right now @200, but i will take your advice and raise the warning. I live here in sacramento where temperature gets up to 110, and i will be daily driving this car.

If anyone tracks there car somewhere hot, can you give me some input on what your water temperature was?

If you lose pressure on a 50/50 mix (bad radiator cap), the boiling point is around 225. So, I'd suggest 215 -220.
