Help Diagnose bogging while cruising.

This problem is driving me nuts a little backstory and problem symptoms.
Bought my 05 SSL used a few months back, on a longer than normal trip (maybe 50 miles) cruising in 5th gear with just a slight small acceleration car would feel like it hit a wall, Felt like boost cut or popping an intercooler pipe off, then right back to normal a second later. It did it a couple more times before popping up a wastegate failure code, ignored it since I was changing the turbo anyway. Swapped turbos, problem didnt show up. Modded the car and put it on a dyno, 0 problems, no bogging, drove it for a couple weeks daily, no bogging. Now took an 80 mile trip it started doing it again, 5th gear (sometimes 4th) right as boost comes on, boost gauge would hit 3psi the bogging would happen, gauge drops a couple pounds of boost and AFR goes all the way rich, maxes my aem gauge at 10.00. Then goes right back to normal I can do a pull like it never happened. Happens on 91 and e85
Since the problem first began Ive changed,
- Spark plugs
- Turbo/wastegate
- Boost controller
- Air filter
- Fuel injectors
- Fuel pump and sock
Boost leaked and my J pipe was bent, changed that also fuel injector seals were leaking before I upgraded with new injectors and seals.

My next move is hooking up my laptop on my drives and hope it happens during a log so I can maybe get a better idea of whats happening. Its so random though so I dont even know.

Thinking MAYBE Map sensor, since it was changed out on the dyno when they tuned it, possibly why it didnt arise while on the dyno.
Any thoughts guys?

logging it is really the only way you're going to find anything out. was it tuned by a reputable shop?

Absolutely, it happened on stock tune as well as after the dual map.

a 2 liter engine should have a airflow of 2 grams per second and idle, I can get the specs for the evo from alldata tomorrow.at work. Example If you start your car and at idle the maf is reading 6 grams per second that's and indication that is bad.
