Steering wheel polishing?

Wondering how to sand down evo wheel to a shiny polish without scratches everywhere?

That'd be tough without cutting the plastic away. But tape everything off, and take your time would be my best guess.

Well I've got it down to a shiny metal. Just need to get it all even and smooth not really sure how to go about it. Scared if I go coarse then smooth again it's gonna end up with deep lines
