Think this wheel/tire combo will work?

Volk racing GTP
17x9 +35

With a 235/45/17 tire on it. Probably be a bit stretched, but could I still run it and it still be safe?

Yes, you can still run it and it will be safe. Although it might not be the best tire combo for that wheel. Check this thread...might help you...

What brand/type of tire are you planning to run? Certain tires work better on wider rims because the measuring rim width is different for different tires.

I will be throwing on a set of Kumho ASXs. I won't need to roll my fenders if I drop the car a little bit will I?

they will fit with spacers up front.

You shouldn't need to roll fenders unless you completely slam your car...which would just be silly.
