I have Cobb springs and drove all winter through snow, crappy PA roads, and perhaps the worst section of road in NY, the dreaded Eastern part of rt 86 in the Southern Tier...all without issue.

I drive my car year round (on Swift Springs). And I have a front lip that puts me 3in off the deck. Still can get around great in the snow (AS tires).

I would never drive my car in or around NYC, especially in a lowered car with low profile tires.

Eibach springs are about as low of a drop you want to go for rough roads. I got away with it through 90% of the winter then the front rubber lip got pealed off on a frost heaved section of driveway that was too steep without going at an angle. Course there was traffic and I had to go faster than I wanted and sure enough I basically rammed the car into the ground... I was pissed. Without the Aero kit you can get away with a bit more but witht the Aero kit you have 5.5" front clearance and around 4.25" with the Eibach. Just have to drive carefully is the main thing.

That's why I'm saving up to buy some Megan's Coilovers.

Drop it in the summer and raise it back up in the winter

You should get Firestone's lifetime alignment deal, sounds like it'll be worth it for you.
