First Oil Change
At last I'm coming up to 1000 miles so I'm about to get an oil change.

Is it recommended to go with the full synthetic at this point, or wait til 3k miles (as recommended for the wrx)?

Also, I'm probably going to have to buy the mobil 1 up front and take it to the oil change shop. How much will I need - 5 quarts?

Why don't you do a search?

Also, I recommend that you RTFM. Your car came with full synthetic from the dealership.
