Is there anything available which lets you read from the ecu, edit the map, and then reflash for Evo's?
There is an STi unit called cobb, cobbtuning.com which allows this, but I do not see anything for evo.
I find it hard to believe there is nothing available.
I am checking for my boss who owns an 05' Evo 8. I have a Corvette and have tuning software which allows me to use my laptop to read the PCM (what our computers are called) and edit ANY setting imaginable. Then, save the file and flash it back to the PCM. It is a very nice thing to be able to do.
Thanks

In support of this comment, I'll add that the current Evo software products by Techtom and EcuTek are only available for a high price to established tuning houses. It's much the same way it was for years in the LS1 world. If you remember, it took quite a while for real LS1 tuning software to trickle down from big tuners to the enthusiast level.
It required efforts by many folks to hack the LS1 ECM and develop new products...but then competition set in and the frigid grasp of the big shops/tuners was overcome. It is getting better in the Evo arena...but it may not progress that far for quite some time...

I was looking for the exact same thing. A guy I work with has an 04 GTO and we have a bit of a friendly rivalry going. It pisses me off to no end that he can tune the car himself with the factory CPU and I'm stuck either going stand alone, or piggy back.
It's not even like I can get a custom tune around here. There isn't anyone based here to do it when I install the parts. I have to wait for Shiv or Al to come somewere near here which means I have to wait to put in parts until I can get a tune for them. I can always get a through the mail flash but that is a pain to have the car down and not be taking full advantage of parts potential due to the extremly conservative mail tune.
I wish we could buy the editting software for a reasonable price like the LS1 guys.

DSMLink will let you read and adjust the tune to a stock DSM ECU (although it has to be an EEPROM ECU).
Many have successfully used this in their Evos. If you're interested do a search here...I think there are a few threads.
I may be doing this soon myself.

A solution like this will be available soon! Piggy backs are bad news, and i have been dying to get my hands on the best ECU for the evo, THE STOCK ECU!

All the piggy back offerings will be worthless, if the software for this device is good!

Yes. EcuFlash software from openecu.org and a $89 USB interface cable from tactrix.com are all you need to do this. The cables and software are releasing at the end of the week!
