Milking the stock ecu for MAX power

I have noticed when datalogging and using the afc that the ecu will advance timing to about 17-19*. When i threw in race gas 100 oct it advanced it to 22*. Why not add more boost along with all the bolt on + cams and let the ecu advance the timing accordingly. Is there a point where the ECU just says hell nah, im not giving you anymore timing? Even if A/F ratios are solid according to the wideband. I have the AEM EMS and my car hates timing 10-12* max, so i threw the stock ecu back in to figure out if its possible... How does the stock ecu determine whats too much for the car

when it starts to knock it will decide that it is enough and pull it back

i understand what your saying, but why not have good enough octane to supress the knock and let the ecu advance it accordingly. Wouldn't more boost along with good octane provide more than adequate results.

Of courese the higher the octane the lower the propensity to knock, that is what octane does, so yes you can raise the boost, but eventually you are going to run out usable turbo and put a lot of stress on it and the engine, then what happens if you get a bad tank of gas and your boost is still cranked up?
