What quick updates to do?

So I blew a head gasket (Well, atleast I hope the head isn't cracked). Needless to say, I'm about to tear the engine down to replace, while everything is off, should I do some quick modifications to the block or just put it back with the stock cams, head assembly, etc.?

This is my DD so it needs to be as comfortable as possible. Right now everything is basically stock, so...

If it's going for the full tear down would you consider removing the balance shafts? It does free up some power, but you did say it's your daily driver, so it's your call.
Some simple cams would be easy. You don't have to go hp crazy; simple HKS 272's are very livable and don't require springs. Although if it's apart, springs will be easy too.
I think it really comes down to how much do you have to spend? There are a lot of good mods that can be done and handled in a daily driver.

first things first. your car is coming on 7-8 years old. it is important to take care of any/all maintenance issues, leaks included. this includes addressing issues with brakes and brake related components (SS lines upgrade is a nice mod). see if ferodo, pagid, porterfield makes nice, street/strip brake pads. other suspension issues to address are those involving tie rods, wheel berrings, cv boots, axles, etc. upgrading select bushings would be a good idea.

now would also be a good time to address "little" things like replacing hoses, lines, stripped/exposed wires, connectors, sensors, etc...

as to your mods, you did not list what you have already... so presuming you have none, then consider these common mods (in no particular order):

a) upgrade suspension, incuding sway bars and key front and rear bushings (eg, control bushings)
b) 660 or slightly higher flowing injectors
c) higher flow fuel pump (eg, Walbro 255).
d) if you have not already done so, learn to tune the car asap. RRE has an informative web site for instructions on how to street tune with the AFC on the EVO (http://www.roadraceengineering.com/newafc.htm).
e) turboback exhaust with high flow cat
f) performance clutch and flywheel
g) upper/lower ic piping and FMIC
h) boost gauge & aem wideband
i) wide band o2
j) afr and boost gauges

do not use an afc on your car, get a wideband and tune it that way so you dont spend unnecessary money something that is about worthless
