Can any one tell me what's the widest tire I can buy without sticking too far out the sides. I've seen this before and it looks goofy. Also, when changing over to bigger and wider rims and tires: how bad does the ride quality get. I have the stock 185/65-14's, but want to change to either 195/55-15's, 205/45-16's or 205/40-17's. Depends on the feedback I get. Help me out guys.

Generally, if you get bigger/wider wheels, the ride will get bumpy but the handling will improve. Also, you'll be a bit slower with bigger and heavier wheels.

the ride will improve with wider tires, the wider the tires, the lower the rpm is at high speeds. road handling of course will also improve. Its usually true that you can go 1 size higher than the tires that comes on the highest model without looking silly or offset the tires/rims. Since the LS/OZ models comes with 195/60R15, you should be able to 205/55R16 with no trouble.
