There's a dude here in Oregon that runs in the 6's over 200 in an 80's camaro. It's pretty impressive

Your definition of a "street car" would run afoul of most legal definitions of a "street car".

IIRC, under the "fastest street car" rules, the car has to drive between the various tracks it is raced at. Sort of like the way rally cars have to drive to each stage. Hence the trailer that old Camaro is towing.
Still probably not practical as a DD. But a big dinosaur tech pushrod V8 is the ticket to reliable high horsepower.

Id like to know what the fastest true street car would be, I.E. passes most state inspections. Of course even thats negotiable considering some states are looser than others, or even like OK with no state inspection.

Most of these 6-8 second drag cars that are driven on the street are nowhere close to street legal vehicles. It's just that nobody cares.

IIRC under federal law there is no emissions check after 25yrs. And as los as it passes safety check i.e. mirrors, signal lights, D.O.T. tires, is Street legal. Now CA I don't know.
