You can start to reach the 7-8* caster range when you start getting really low on ride height. More normal ride heights, you'll probably cap out around 6*.

Yes, caster changes will change steering characteristics including bumpsteer and ackerman angle. Not significantly, but it is there. It wouldn't be too difficult to add adjustable bumpsteer to these cars...

Yea. This is pretty much what I did. I maxed out Caster with the Ciro plates until I had an acceptable amount of rub on the rear fender well with 285/30/18. On full lock it will rub slightly with full tread tires. Currently running 5.4 degrees I believe at a 1.25" front drop.
