How difficult was that to do because of the stability control?

I held the button for a few seconds and it turned off

Yup! Just hold stability control for 5-ish seconds and it will stay off. The REAL problem with doing this is packing your rims full of snow, which causes them to become off-balance and can shake at high speed. So be prepared to clean them out after fun-time.
