I wasn't looking for the easiest way to add a coolant temperature sensor; I was looking for the best way to do it.

There is a very good reason Mitsubishi put their coolant temperature sensor in the BOTTOM of the thermostat housing, before the thermostat, and not after it.

Yea I gotcha man. But that is the right way.....once the thermostat opens there will be no difference in temp reading in either location. What I meant was I think your making it more complicated that it needs to be.
