How many sets of wheels and tires?
I was thinking about getting another wheel/tire combo. I like the current setup but I don't want to buy tires every 12k miles. I use the car for daily commuting and would rather get a tire that will last longer and still have some performance and handling features. I would most likely go with used wheels. Not sure what type yet. So I would use the enkei wheels and Toyo tires sparingly.
The most important thing is to know what you are using the car for... If it's just a DD, then smome all season tires might work best for you, they will last a long time, but handling will suffer. There are compromises no matter what you choose, but more information would allow us to give you better direction in tire/wheel combo..
Have you considered coming to the NTEC meeting next Tuesday? If you come, you will find a wealth of knowledge from the members and have a good time talking about the car...

Since you are in Texas you can get a summer tire and get away with them all year round.

Size wise - you can go up to 255 width on stock rims. 255/40/17 and I have heard of 255/45/17 -- which I will see this weekend at the MIEvo.net meet.
I have Sumitomo 235/45/17s on my car - great bite and good all around tires. Now at 20K+ and I still have about 15K in them. Very happy with those.

If you want to go the all seasons route you could try the Toyo Proxes 4. They do great for me. My car is a DD though and I do drive in the snow as well. They cover all bases quite well. Plus I am at 15k on them and they still look great.
Thanks guys for your input. This site amazes me on how much people know about Evos. I was searching the site and found some suweet looking rims and tire combos. I need to ask momma bear for some money.....
