Cafe Tu Tu Tango on I-Drive is unique. It's billed as the place where "starving artists" go to eat. Unique menu and unique surroundings. Highly recommended.
Take a walk around Thornton Park just slightly outside the downtown core. Nice shops and cafes there.
Don't forget Winter Park and Park Avenue. More upscale shops and cafes.
Check out the Millenia Mall as well. Very upscale mall - Burberry, Tiffany, etc.
Cape Canaveral and Kennedy Space Center is cool. About 45 minutes east of Orlando.

Talking about Downtown Diz, go by the House of Blues for a great dinner and a concert.
La Nouba, a Cirque Du Soleil performance gets my nod of approval (seen it twice!).
Clermont (~30 min drive west of Orlando) is home to Lakeridge Winery. They've got a 45 minute tour and wine tastings.

Oh yeah, don't forget to bring money....tons of it
.... but seriously you should try Crazy Buffet on Altamonte Springs like 10-20 min from downtown orlando going upwards. They have the BIGGEST asian buffet i have ever seen plus those mouth watering sirloins wrapped in bacon are to die for

And if you do head over to winter park (he's right, there is a really nice downtown shopping area there) there is also a FANTASTIC (if this is your style) irish pub in winter park called fiddler's green. Great pub atmosphere (no pounding rave music, just comfy seats and good conversation.) They also have authentic (and good) food available, and my favorite, Strongbow on tap
