Ralliart overheating after launching in 1st

I recently bought a 04 ralliart with 200000 miles (ik probably not the smartest buy) had a new radiator, thermostat, hoses, and cap car ran fine all the way from el paso fine(771 miles) .......I was leaving a friends house one night and spun the wheels in first gear and chirped going into second and started getting HOT HOT....... I got the car back home and there was a leak in the hose so I replaced the hoses, waterpump, timing belt, and another thermostat....and it keeps building up pressure I'm very lost and defeated at this point ik it's not the head gasket, no bubbles in the radiator, my oil staying nice and clean, no leaks and no smoke from my tail pipe....god help my soul lol

Yes the fans are working but I took out the new thermostat today and ran it without one and it never overheated even after taking it to 4500 rpms twice...sensor I guess?
