Looking at doing some mods that will help performance but don't need a tune or void warranty thx! Need some advice on brands and what to do looking to spend $1000-2000

Just so you know, you will not get a performance increase without tuning. You will get a slight increase going for an aftermarket air filter as it will lean out the AFR's ever so slightly (about half a point). Best mod you can do is a GST map and boost pill - 20-30whp in 20 minutes. Plus, putting on any aftermarket parts is a reason for Mitsu to void your warranty anyway...
And forget an intake. Nearly all intakes will need the MAF to be calibrated to suit, which goes against your whole no voiding warranty...
Blow off isn't really required unless boosting over 22psi, but the sound may be different.
Evo X intercooler and LICP are nice upgrades to the tiny cooler and pipework that's there stock.

A couple of these parts will make the car louder, the upper intercooler pipe will improve throttle response, and the larger intercooler will help with the knock, but you won't get any notable power gains without a tune. In fact the short ram intake will get you less power as it sucks hot air from the engine bay. For optimal gains you'll need the parts you mentioned and a high flow cat minus the intake. After a good tune (which MUST address the SST transmission to avoid very expensive repairs down the road) you can get up to 250 hp at the wheels (190 stock).
Also keep in mind that mods and Mitsubishi warranty don't get along. If you're worried about losing your powertrain coverage, just don't do mods.

The choice of a catback is a matter of personal taste. UR ranges from fairly loud to very loud if you don't add mini-muffler and resonator.
Evo X IC is excellent and will save you a lot of $$. Do not buy the UR upper pipe, it's a terrible fit. ETS one is very nice, I'd recommend theirs (maybe even with their intercooler if you want to go for something better than Evo X one).
Skip the intake, just get a high flow cat. That's the only way to make good power gains with just bolt-ons.
As far as gauges go, lots of people use the AEM wideband, but it's crap because it's pre-calibrated. It gives you incorrect data right out of the box (especially at higher altitude) and only gets worse with time. Get the Innovate LC-2. Same sensor as the AEM, but you can calibrate it when you install it and then it self-calibrates (or you can re-calibrate it any time). Just make sure your downpipe or high flow cat has a wideband bung. Best other gauge would be boost. Pretty much anything should do for that since the car already reports it.
Once you get all your parts installed, make sure you contact a good etuner (I recommend Eric at Kozmic Motorsports, nobody in the entire world knows the SST better than him, so he can make a great safe tune for you that won't damage the transmission). You should get a Tactrix cable and a 3-port EBCS (Cobb's is really cheap now) for the tune.
