Question about torque and my clutch.

Hi, I'm in the process of modding the evo at the moment (obviously) and I'm wondering if anybody could help me on a few questions I have.

I recently got a new clutch in the car, Exedy Stage 1 Organic and its supposed to hold up to 339 Torque from what I read from a vendor's website, and I don't want to replace it for a long time.

What I want to know is....

How can I tell from the dyno's reading in relation to how much torque the clutch will actually safely hold? (basically my torque vs clutch's ability to hold the torque)
So when I dyno my car and it says you have 330 torque will it really be 330? or Will I really have like 350 torque because the dyno reads too low and end up with a slipping clutch in a couple thousand miles?

How far up the path do you think I could go in terms of performance mods while not going over the amount of torque to where I would need to get a better clutch?

Do you think I'd be better off asking somebody like AMS this question? I plan on probably taking the car there for a tune once I get the mods I want.
