What it sonds like is the clutch is out of adjustment. there is an adjustment screw at the top of the pedal that is for FINE (minor) adjustments. But I would still take it to a shop/someone who knows how, to have them look at it.

i have fully built viii with an exedy triple, it was installed new by the buschur crew so i know the install was legit. i have the exact same problem getting it into gear. it takes a little finesse, but once you learn it, its not that bad. its an extremely heavy clutch, not very practical for street use.

learn to live with it or swap it out for something a little more mild
