That all depends on what you wish to achieve with the evo, i wouldnt suggest just going in blind and removing things you think are not needed.
If you're just looking to clean up the bay to make it look nicer, dress up items ,wire tuck and relocate the accelarator cable is what id go for.
If you're looking to reduce weight theres nuemurous items that can come out and at the same time making everything look better, such as A/C and P/S and all the lines that go with it.
There really isnt much you can take out without affecting the functionality of the rest of the car. Eg you could remove the front washer bottle, but then you lose the intercooler spray.

So with the evo 8 if I remove the power steering will it cause troubles with the drive train computer? Because I'm trying to clear space in my engine bay as well as make it easer to work on.

No. But you will develop awesome upper body strength from trying to turn the steering wheel at stop or low speed.

What isn't easy to work on with this car?

Also you have a standard Evo 8, the MR was only in 2005 for the USDM Evo 8s.

The EVO has one of the fastest steering ratios of a production car made. GOOD LUCK steering it without power assist.
