Needs Top-End POWER
Coming from a S/C S2000 I am definitely missing the top end power with my VIII MR (I know apples-oranges) but How does one go about making big top end power with the VIII keeping the stock turbo and daily drivable......?

Fuel pump, injectors, stockframe turbo (BBK, HTA FP Green), E85, some Kelford 272/GSC S2's and a good tuner.
Car will be a different animal. I have raped many of a porche, vette's and even 1 viper on that setup.

If you want top end in an evo engine you will sacrifice low and mid range power. Top end power will come at the cost of lag.
If you really want the car to be fun to drive, tune it for the biggest power under the curve. After all, most of us spend the majority of driving in the mid rpm range, not the top end.
As others have suggested, cams will be in order. You really can't go wrong here. All cams help make power, but the ranges are different.
Turbo selection....well this is a different story. The larger turbos will certainly help in your top end goals, but the spool time will, in my opinion, make for a very "peaky" feel of a car. No power and the all of a sudden BAM massive power.
FP Green, or Red will net very good results without much loss in quick spool.
E85 will certainly help as well.
Search around and find the parts that will support your goal. We all have opinions on how you should go about it. Ultimately it is up to you on how you accomplish your goal.

Depending on what current modifications you already have I suggest,
cams (kelford 272/272 show the biggest power gain for evo 8s)
fuel pump (walbro 255)
turn up the boost (manual boost controller)
and a tune. Larger injectors are not really needed unless you upgrade the turbo or want to tune it for e-85.
